Taste Your Own Egg Florentine Now!

The ingredients are:

  • 25g/1oz butter
  • 75g/2¾oz spinach
  • salt and freshly ground black pepper
  • 2 free-range eggs
  • 100ml/3½fl oz double cream

Here’s how to do it:

1. Preheat the oven to 200C/400F/Gas 6.
2. Melt the butter in a frying pan over a medium heat. Add the spinach and sauté for three minutes, or until wilted.
3. Place the spinach into a small oven-roof dish and season well with salt and freshly ground black pepper.
4. Crack the eggs into the dish and pour over the cream, then place into the oven and bake for 10 minutes, until golden and bubbling.
5. Serve in the oven-proof dish.
